ot that this is a surprise to anyone reading this, but living in Buffalo from the months of January until April isn’t easy. We get teased by spring for months, leaving us thirsty for the warm weather that melts away our cold struggles.
Once Mother Nature feels like we are ready for summer fun, Buffalonians reincarnate and flock toward outdoor patios.
When I think of summer, I think of seafood. Remington Tavern and Seafood Exchange in North Tonawanda is the perfect spot to relish the warmth—complete with a patio overlooking the Erie Canal. The building itself, which has been around since 1895 and was named Power House #4, has been transformed from a trolley barn to the gorgeous eatery it is today. You can feel its history while you’re there.
Remington Tavern has plenty of dishes I love and could gush on about, but if I had to choose (and I do for this piece), it’s the Faroe Island Stuffed Salmon. Located in the North Atlantic between Iceland and Norway, Faroe Islands is the ideal location for salmon to flourish due to the crystal-clear water and strong currents.
Topped with a lemon caper butter sauce and served under a bed of roasted potatoes and vegetables, this crab-stuffed-salmon will have you daydreaming of a secluded life in Iceland, farming for salmon for a living.
The dish doesn’t even need the crab meat, which is a testament to the quality of the salmon. The lemon caper butter sauce amplifies the soft texture of the salmon, while the remaining residue drips onto the roasted potatoes.
“Funny enough, I didn’t want the dish on the menu originally,” says chef/co-owner Paul Jenkins. “We had an old chef that snuck it by me on the menu one night and I’m glad he did, because now it’s been a featured item and best seller on the menu for the last 10 years.”
