The Old Pink—the iconic Allentown dive bar that was burned to the ground by arson in 2024—might be gone. But it's certainly not forgotten, at least not at Saint Neri.

The Elmwood Village cocktail bar offers a drink named The Pink, which General Manager Jill Gedra describes as "tart, refreshing and sexy." Between the delicate orchid garnish and that description, who could resist giving it a try?

The Pink at Saint Neri

Ingredients

2 oz. Empress gin

1 oz. lime juice

1 oz. simple syrup

.25 oz. aquafaba

Ice

Pink orchid for garnish

Instructions

Chill coupe glass.

Combine all ingredients into cocktail shaker and shake hard for 10-12 seconds until the outside of the shaker feels very cold.

Strain into your chilled coupe glass, then garnish with orchid.
